Egg Dumplings

Ingredients:

3-4 eggs, scrambled
Salt
Pepper
Flour

Directions:
Add salt and pepper to scrambled eggs (a lot more salt than you think).  Add 1/3 cup flour and start mixing with a fork.  Continue to add flour in 1/3 cup increments until the dough is VERY VERY thick and sticky.  Then place dough on a plate and spoon into boiling water.  When all dumplings are spooned into the water, cover and simmer about 20 minutes.  Pour into colander and rinse with cold water.

Dumplings may then be added to a soup or fried.

To fry:
Place butter in a pan and saute onions.  Add dumplings, salt and pepper to taste.  Fry until dumplings are browned.
