Tomato Vodka Penne

Ingredients:
2 tablespoons Olive Oil
4 garlic cloves, minced
6 ounces sliced prosciutto or Canadian Bacon, chopped
3 scallions, chopped
1/4 teaspoon cayenne red pepper
1/4 cup Vodka
28 ounce can crushed tomatoes
1 pound penne
3/4 cup heavy cream
1 teaspoon salt

Directions:
Heat oil in a medium saucepan over low heat.  Add the garlic; cook about 8 minutes, stirring occasionally.  Add prosciutto or Canadian Bacon, scallions, red pepper, and vodka; cook 4 minutes over medium heat.  Add tomatoes; cook about 15 minutes.

Cook penne al dente.  Drain well and keep warm.

Add cream and salt to the tomato mixture; cook 3 minutes.  Toss penne with the sauce and enjoy!!
