Potato Cheese Soup

Ingredients:
1 cup water
1 small onion, chopped
3-4 medium potatoes, peeled and cubed.
3 cups milk
3 tablespoons butter
2 tablespoons flour
1 cup shredded cheddar cheese
Salt and pepper to taste
Parsley flakes.

Directions:
Boil salted potatoes until tender.  Do not drain.  Mash potatoes, leaving some chunks.  Add milk and butter, stirring over medium heat.  Add salt, pepper, and parsley flakes.  Mix in flour until thickened and bubbly.  Remove from heat.  Stir in cheese, serve when melted.
